Liver, kidney, heart, tongue, sweetbreads, tripe and marrow bones — the parts that a whole-carcass butcher has and a supermarket usually does not.
Offal is best fresh, so some of it is set aside to order. If you need a particular piece on a particular day, message us and we will keep it for you.
